Ingredients

  • For the Potatoes
  • 3 pounds red potatoes

  • 1 tablespoon kosher salt (for water)

  • 3 tablespoons white wine vinegar

  • For the Dressing
  • ½ cup extra virgin olive oil

  • 2 tablespoons white wine vinegar

  • 2 teaspoons Dijon mustard

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

  • Herbs Add-ins
  • ½ small red onion (about 1 cup sliced)

  • 2 tablespoons fresh dill, minced

  • 2 tablespoons fresh basil, minced

  • 2 tablespoons fresh parsley, minced

Directions

  • Cook the potatoes: Place potatoes in a medium saucepan and cover with cold water by 2 inches. Bring to a boil, add 1 tablespoon kosher salt, and cook for 15-20 minutes until fork-tender. Drain well.
  • Season while warm: Cut warm potatoes in half (or quarters if large) and place in a large mixing bowl. Sprinkle with 3 tablespoons white wine vinegar and toss gently. Let cool slightly – this helps the potatoes absorb all that flavor!
  • Make the dressing: In a small bowl, whisk together the olive oil, 2 tablespoons white wine vinegar, Dijon mustard, salt, and pepper.
  • Combine everything: Pour the dressing over the potatoes and toss gently. Add the red onion, dill, basil, and parsley. Toss again carefully to combine.
  • Serve: Enjoy warm, at room temperature, or chilled.
